veggie: Pepper 'Aji Crystal'  Aji Crystal Pepper
C. Baccatum from Curico in Chile. It is such an amazing producer and it’s one of the first to pod up and has a long season.

The plant grows well in a 5 gallon pot to about 2-3 feet and produces yields of 4 inches long pendant shaped pods. The chili pods mature from light green, through pale yellow and then to red. Apparently the chilies are best eaten immature, when they are yellow. They have a delicious citrus flavor and would be great for making a salsa.

All in all Aji Crystal is easy to grow, great producer of delicious pods and it looks spectacular when it’s full of these pale yellow pods.

Heat level: Medium , 6- 7 /15

Highly aromatic fruits; their flavor is unusual and complex, with overtones of black pepper and coriander, and undertones of other spicy flavors. An excellent choice for sautéed vegetables, rice and bean dishes, paprika, or herbal vinegars. The thin-walled pendant fruits are 1 x 2 in., tapering at both the stem and blossom end. Plants have good foliage cover and bear at 18 in. high. Seedlings grow slowly at first, but grow rapidly later in the season to 48 in. or more. -Southern Exposure Seed Exchange
